Kohlrabi

This tasty vegetable is the swollen root of a member of the cabbage family; only the the root is eaten, and not the scant, small leaves are attached to it. The root is round, pale green, but sometimes purple. It has a tough thick skin. Inside the flesh is tender, sweet and juicy. It can be eaten raw, either with other vegetables or on their own, sliced or cut into strips and added to salads or as crudités. It can also be stir fried or cut into chunks and braised with tomatoes or spices, or added to hearty vegetable stews.
