This extraordinary-looking vegetables the bud of a thistle, and little more than 10% is edible. But the edible parts are a delicacy. The globe artichoke consists of tough, grey leaves surrounding a tender heart and an inedible core. It is usually served whole as an appetiser and can be eaten hot or cold. The eating process is slow and deliberate, each leaf is pulled from the globe and the fleshy end dipped in melted butter or vinaigrette. The fleshy part is then scraped off between the teeth and the remaining leaf discarded. When all the leaves have been removed, the central hairy choke is exposed. This is scooped out and discarded, revealing the tender heart. This is the prize morsel, eaten with more melted butter or vinaigrette.<br />
