Lime is smaller and rounder than lemons, limes are bright green tropical fruit. They have thin smooth skins and distinctively flavoured, sour, astringent juice. There are several varieties, including key lime, Tahitian or Persian lime. They are widely used in cuisines in South East Asia, India, Mexico, South American and the Caribbean. Lime juice is squeezed over salsa and used to add a sour edge to Thai green curries and stir fries.
