Cherry is the smallest of the stone fruit, they can be divided into 3 groups, sweet, sour and sweet-sour.

Sweet cherries are good for eating raw and may have a crisp or soft flesh depending on the variety. Whereas sour cherries are too sour for eating raw, but are good for cooking. Sweet-sour cherries can be eaten raw or be used in cooking. They most readily available during the summer months.
