Asparagus
A very seasonal luxury, It has a subtle but distinctive taste and delicate texture. Asparagus may be served as an appetiser with melted butter, vinaigrette or hollandaise sauce, as a topping for canapés, or as a side dish or garnish. It can also be added to risottos, tarts, stir fries and quiches.
British asparagus is in season from late spring to early summer, and is at its best when freshly picked.
