While pineapples can vary greatly size, all are oval and have a knobbly orange or golden skin topped with a plume of leaves. The yellow flesh has an astringent but sweet flavour and a juicy fibrous texture. Serve in rings, chunks or wedges on its own. in fruit salads or ices. It can be used cooked too and is wonderful in cakes such as an up side down cake, or desserts. Pineapple is used in savoury dishes too, such as pizza and sweet and sour Chinese dishes.
