These conical shoots are cut from the plant when they are about 15cm long and have brown overlapping leaves. The flesh inside is a pale, creamy colour and is always cooked before adding to other dishes to destroy any toxins that it contains. Sliced bamboo shoot is a popular addition to Asian-style stir fries and soups, as much for its pleasingly crisp texture as for its mild flavour.
Look for fresh shoots in Asian food stores. If you can't find fresh shoots they are also readily available in tin cans.
