Chinese Broccoli
Also known as Chinese Kale, this leafy green vegetable has soft green leaves and stems that can be eaten in the same way as purple-sprouting broccoli. Its white flowers distinguish it from choi sum, which has yellow flowers, indicate when it is ready to eat. Look for fresh-looking specimens with white buds, rather than open flowers, and avoid any that are limp and wilting. The stalks will need 2-3 minutes more steaming than the leaves. Similar to choi sum this vegetable is lovely eaten with oyster sauce, soy sauce or sesame oil.
