Chinese Cabbage

Also known as Chinese leaves or Peking cabbage, this long cabbage has pale green leaves with thick, white central ribs. The leaves have a crisp texture and a very mild flavour with faintly peppery overtones. They are good sliced and added to salads, or added to stir fries and cooked briefly. Look for heavy , fresh-looking specimens and avoid any that are limp or wilting.
