Also called bonettaine onion, cipola, (the Italian word for onion)is a small onion with pale brown, papery skin and pale yellow flesh. It has a good sweet flavour and is usually peeled and cooked whole to show off its unusual shape. Cupola is also good caramelised, roasted, bottled or pickled.
