Citron's resemble a very large, knobbly lemon, these fruits have a thick tough rind. The zest is not a very juicy with either a sour or sweet, slightly lemon flavour. The rind has a distinctive aroma, and it is for this that the fruit is used - almost exclusively for the manufacture of candied peel. The flesh may be used to make marmalade, and in Corsica it is used to make the liqueur cedratine.
