Also known as Florence fennel and fennel root, this is a member of the parsley family. It takes the form of creamy-white bulbs, either round and plump or sleek and flattish, with feathery green fronds poking out of the top. Fennel has a crisp, celery- like texture and a fresh, sweet taste with a definite hint of aniseed. It can be sliced thinly in salads, or more thickly for braising or sautéing. Wedges or halved fennel can be blanched and then baked with cream and parmesan or creamy sauce, braised in stock, or brushed with oiled seasoning and chargrilled or barbecued. long, slow cooking mellows the pronounced aniseed flavour, and can win over even those who don't like aniseed.
