Jake has made his mark on Dishoom cocktails menus since joining the business in 2015. Quickly rising through the ranks to bar ops manager for the group, he lead the development of the all new cocktail and drinks programme for Permit Room, which opened in October 2023 on East Street.
Permit Room is a tribute to the way Bombay kicks back (and gets tipsy) across the city’s beer bars and drinking holes. The cocktail menu ranges from spins on classics, to their own fresh inventions inspired by travels to Bombay. The beer list is extensive and ever changing, with plenty of locally brewed options.
