Native to Mexico, jicama is also known as Mexican potato and yam bean. With a thin brown skin and crisp, white, juicy flesh, it has a sweet and slightly nutty taste, not unlike that of water chestnuts. Jicama may be quite small or weigh up to 3Kg. It is popular in Chinese cooking: sliced and stir-fried, or eaten raw in a salad. In Mexico, it is usually served raw in thin slices, dipped in lime juice and sprinkled with chilli.
