Peaches are native to China and there are two types, clingstone or freestone.
This refers to how easily the flesh is separated from the stone. Most peaches are rounded but some are flatter, such as the doughnut peach or flat peach. They all have the same fuzzy skin and most have golden flesh, but some have flesh that is lighter in colour. All are delicious and have a fresh fruity taste with creamy back notes of and tropical nuances. Peaches can be eaten raw, cooked or poached. There are many different tarts that use peaches.
