Regarded by many as superior to Calabrese, this purple-green variety of broccoli grows on shooting, fleshy stems rather than in a tightly packed head. It is most often served as an accompaniment, sometimes with butter, lemon or oil, or as an appetiser with hollandaise sauce. Purple sprouting broccoli is in season in Spring. Look for firm stems and fresh looking heads and eat within a few days of purchase.
