This dark green, crinkle-leafed winter cabbage has an excellent flavour and tender leaves, and is universally regarded as the best green cabbages for cooking. Choose Savpy cabbages that are heavy, with firmly packed leaves, and store in a cool dark place. NOTE: All cabbages contain sulphur compounds, which are similar to those that make mustard or horseradish so pungent. Cooking neutralises them, but it can smell while they are cooking.
