Spinach

With tender, dark leaves and a distinctive 'iron' flavour, spinach is a versatile vegetable that can be served on it's own or added to other dishes. It can be steamed or sauteedin butter or olive oil, cooked gently with tomatoes and garlic, added to soups and curries, used in quiches or cooked with eggs Florentine and pizza Florentina. Spinach is available all night round; summer spinach is usually paler with tender leaves; winter spinach is darker and coarser. Only young tender leaves should be used for eating raw. Look for bright, fresh-looking leaves and avoid any that are wilted or with brown patches. Store in the fridge and use thin a few days.
