Similar in shape and appearance to red cabbage, white cabbages have spherical heads with firm, tightly packed, pale green leaves. With a sweet, mild taste and firm texture, white cabbage is good used raw in salads such as coleslaw, boiled or steamed as a vegetable accompaniment and served with butter, or added to soups and hearty winter stews. White cabbage is available all year round. Look for heavy, firm cabbages with unblemished, unwrinkled leaves and store in a cool, dark place.
