Also known as Spanish onion, the yellow onion is the largest type. Large and round with pale brown skin and light yellow greenish flesh, the yellow onion is mild and sweet and is not too pungent. It is an essential ingredient in Spanish tortilla, and is a good all-rounder, which can be fried, stuffed, cut into rings and roasted. Long, slow cooking results in meltingly tender onions with particularly mild flavour.
